The umami paste is made from koji – white rice that’s inoculated with a naturally occurring fermentation culture. It breaks down the rice into a paste that has an intensely umami flavour. The koji then helps to intensify the umami of anything you add it to! Here it’s mixed with soy sauce, giving it a touch of extra saltiness and sweetness. The ginger adds extra warming sweetness.

This organic umami paste with ginger is such a versatile ingredient. Squeeze a dollop into stir fries, curries, soups, or stews and experience a depth of flavour you didn’t think possible. Add umami paste to meat marinades to bring out the meat’s best natural flavours and make it meltingly tender.
